Tomato/Zucchini side dish

I was lying in corpse pose at yoga last night and was desperately trying to think of a better name for this post (instead of not thinking about anything but my breath - silly me!).  Haven't come up with one yet so you are stuck with this (boring, non-creative) one.

I needed to use up some zucchini and grape tomatoes yesterday before they became fit only for the compost bin.  I made this little veggie side dish and thought that it was pretty darn good for a first attempt.

1/2 large zucchini
1/3 container grape or cherry tomatoes (or 1 tomato)
1-2 cloves garlic, diced
2 tsps olive oil
1/3 tsp Hazelwood Tomato Sauce blend*

Dice the zucchini into 1 inch pieces.  If using a regular tomato, chop it into small pieces.  Warm your frying pan over medium heat and add olive oil.  Once the oil has warmed, add zucchini and garlic.  Saute zucchini on one side for 3-4 minutes and turn when golden brown.  Add tomatoes and saute until softened (approximately 3 minutes), stirring frequently.  Sprinkle tomato sauce blend over mixture and cook for 1 minute.  Serve immediately with a meat of your choice.  Enjoy!


*Note - If you don't have any Tomato Sauce blend, you can substitute equal amounts dried basil and oregano.
